Terry's Terrace extends its Oktoberfest menu

Terry's Terrace, located in Harrison Township, has put together a special menu for Oktoberfest featuring all of the German favorites. The menu has become so increasingly popular amongst guests, that they have decided to extend their Oktoberfest menu until at least October 10.

Chef TJ Newington from Terry's Terrace joined us in the FOX 2 Cooking School to tell us more about the menu and to share his portobello schnitzel recipe, which you can find below.

PORTOBELLO SCHNITZEL
Stuffing:
1/2 lb. Camembert.  Rind removed.
4oz. Grated Butterkase
1/2 cup fine diced yellow onion
1 TBL chopped chives
1/2 cup sour cream
1 tsp paprika
salt and pepper

Mix all ingredients together for the stuffing. Let the cheeses sit at room temperature to soften up. (The heat from your hands will also warm the mixture up while you're mixing it.) Remove stem and gills from eight Portobello mushrooms.  Season the mushrooms with olive oil and salt.  Bake for 4 minutes at 350F.  Let mushrooms cool, and stuff them with the cheese mixture.  Put the stuffed mushrooms in the refrigerator for a few minutes to let the cheese set.  Then coat the mushrooms in flour, egg wash and panko bread crumbs.  Get a sauté pan hot with butter and sear the mushrooms, stuffing down for a minute until golden brown.  Flip the mushrooms carefully and finish in the oven for 5 to 6 minutes.
