The Union Joints' gluten free menu

Eating gluten free is not an option for many people, which makes going out to eat challenging. The Union Joints recognize this and have crafted a menu with lots of gluten free options to choose from.

Executive Chef Aaron Cozadd joins us in the FOX 2 Cooking School to tell us more about the menus. He even shared one of his recipes with us, which you can find below.

Gluten Free Pork Hash Pasty
For the Dough:
8 oz unsalted butter, cubed and chilled
1 tbl kosher salt
2 tbl sugar
14 oz gluten free flour
2 tsp xantham gum
Mix dry ingredients.  Cut butter into dry ingredients.  Add water to make dough.  Let chill overnight and roll to desired thickness.  Cut into 12" rounds.

For the Filling (4 servings):
6 oz pulled pork
8 oz scrambled egg with sage
6 oz cooked hash browns (prebrowned in oven)
2 oz chopped scallion
6 oz smoked cheddar

To Assemble:
Layer toppings in the center of rounds of pie dough. Egg wash edges of dough, and fold  over. Seal edges, and brush top of pasty with egg wash. Cook at 425 degrees for 15 minutes.
