Cuban style pork skewers
Pork and marinade:
1 lb. pork sirloin or tenderloin cut into 1" pieces
1 tbsp. paprika
1/2 tsp. cayenne pepper
1 tsp. granulated garlic
1 tsp. dried oregano
1 tsp. kosher salt
1/4 cup vegetable oil
Combine all ingredients, rubbing it into the pork, and refrigerate for at least 1 hour, or up to 24 hours.
Mojo sauce:
1 can orange juice concentrate
1 cup pineapple juice
1/4 cup freshly squeezed lime juice
1 tbsp. oil
1 tsp. minced garlic
1 tsp. ground cumin
1 tsp. ground coriander
1/4 cup jalapeño, finely minced
1 tsp. cornstarch
1/4 cup chopped cilantro
Salt to taste
Heat oil over medium heat in small sauce pan.
Add garlic, cumin, jalapeño, and coriander and stir until fragrant, about 30 seconds.
Add OJ concentrate, pineapple and lime juices, and simmer for 5-10 minutes until slightly reduced.
Mix cornstarch with 1 tbsp. water and add to sauce. Stir until thickened. Add cilantro. Add salt to taste.
