Celebrate National Nutrition Month in March

March is National Nutrition Month, and with signs that the weather is turning, it's the perfect time to start thinking about spring cleaning, whether it's around the house, at work, or even cleaning up our diets.

Nutitionist  Doniss Hicks, of Olympia Nursing and Rehabilitation Network, stopped by the Fox2 News studios Sunday morning to showcase some tricks to adopting a healthier lifestyle.

RAINBOW KALE SALAD
Ingredients

  • 10 oz baby kale or fresh chopped kale (stem removed)
  • 1 c strawberries
  • 1 c fresh chopped oranges
  • ¼ c diced red onions
  • ¼ c diced red peppers
  • ½ c raw pumpkin seeds
  • ½ c raisins or craisins
  • ¼ c chopped cilantro

STRAWBERRY DRESSING

  • ½ c strawberries
  • 1 tbs strawberry jam
  • ½ c berry juice
  • 1 tsp lemon juice
  • 2 tbs dijon mustard
  • 1 tbs balsamic vinegar
  • 2 tbs olive oil
  • ½ tsp garlic powder

 Directions

  1. Combine kale, strawberries, oranges, red onions, red peppers and cilantro in a large bowl.
  2. Top with raisins and pumpkin seeds. Drizzle with strawberry dressing. Serves 2.
  3. To make dressing: Blend strawberries, strawberry jam, berry juice, lemon juice, dijon mustard, garlic powder and balsamic vinegar. Once thoroughly mixed, add olive oil and blend again.
