Chef Paul's apple grain salad recipe
(WJBK) - November is National Diabetes Month. According to the American Diabetes Association, someone in the United States is diagnosed with diabetes every 23 seconds. When you or someone has diabetes, learning to eat nutritious foods can be challenging and the choices limiting.
Ulliance, a human resource consulting company based in Troy, teaches its clients how to make healthy choices when managing a busy work schedule. As part of its Life Advisor Wellness program, Chef Paul Penney, Ulliance's culinary specialist, offers cooking demonstrations to teach employees how to prepare healthy, easy and practical meals.

APPLE GRAIN SALAD
Yield: 6 servings
Prep time: 15 minutes
Cook time: 35 minutes
Ingredients:
- 2 ½ cups farro, cooked - 1 cup, dry
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey (optional)
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 3 tablespoons extra virgin olive oil
- ½ cup green onions, thinly sliced
- 1½ - 2 cups of your favorite Michigan apple - (Jonamac or Honeycrisp are great), chopped
- ¼ cup crumbled low-fat feta cheese
- ½ cup dried low sugar cranberries
Directions:
- Prepare farro according to package directions.
- Meanwhile, in a large bowl, whisk together vinegar, mustard, honey (optional) salt and pepper. While whisking, slowly drizzle in oil until all oil is incorporated.
- Add onions, apple, cheese, cranberries and farro to bowl; toss until well combined.
- Serve immediately, or refrigerate up to 4 hours before serving.
