(FOX 2) - Trattoria Serventi joined us on Meatless Monday to show us how to cook up a mushroom risotto.

1 cup cooked Arborio rice
1/8 of an onion julienned
3 jumbo button mushrooms sliced
1 small Portobello mushroom
1/4 stalk sliced celery
2 oz Madeira wine
2 oz veal stock
1 oz unsalted butter
4 oz heavy whipping cream
1 hand of parmesan cheese
Salt/Pepper to taste
Fresh/dry basil to taste
Heat sauté pan with 1 oz olive oil and start sautéing onion, celery and mushrooms and let cook until caramelized.
Season with salt and pepper and add in a pinch of fresh and dry basil.
Deglaze the pan by pouring in the Madeira wine and let reduce by half.
Add in veal stock, cream, butter and rice.
Let simmer for a minute to 2 and stir in a hand of parmesan cheese.
