Meatless recipe for your Valentine's Day meal
(FOX 2) - You don't need meat to make it a special Valentine's Day meal.
Chantele Jones, owner of Vdalish: Vegan Cuisine and Desserts joined us in the FOX 2 Cooking School to show us a meatless recipe that's fancy enough for your special holiday.

Kitchen Gadget Needed: Spiralizer
Ingredients for Zoodles:
2 Zucchini's
Ingredients for Walnut Meat:
1 1/2 c Fresh basil
1 c Raw walnuts ( Optional: soak walnuts in water for an hour before preparing "meat")
1/3 c Olive oil
1/3 c Nutritional yeast
1/4 c Sundried tomatoes in oil
4 Garlic cloves
1tsp Salt
1 tsp Black pepper
Instructions:
1. Wash and pat dry your zucchini, trim off the tops and ends and follow the directions on your spiralizer to make your zoodles. Once done place in a bowl and set aside.
2. In a food processor, combine all ingredients for your walnut "meat" and process, stopping to scrape down the sides of the container, and continuing to pulse a few more times. Mixture should be well combined but still slightly course- which is good for texture.
3. Add "meat" to zoodles and toss to coat evenly. Garnish with additional sundried tomatoes and fresh basil, if desired. Serve immediately, as the zoodles will get mushy if left sitting for too long.
