MICHIGAN APPLS WITH CARAMEL SAUCE AND CANDIED WALNUTS

1. Make candied walnuts:

Toss 2 c. walnuts in a bowl with 1/8 c. maple syrup, 1/4 c. organic dark brown sugar and 1 t. cinnamon, coating thoroughly.  Spread onto a baking sheet and bake 10 to 12 minutes at 350 degrees, until the sweeteners have dried. Do not over bake; they will burn fast. May be stored at room temperature.

2. Make caramel sauce:

Pit 10-12 dried medjool dates, insuring to remove all stems. Place in high speed blender with 3/4 c. pure maple syrup, 1/2 t. cinnamon and a pinch of mineral salt. Blend until smooth.

3. Drizzle caramel over freshly sliced Michigan apples and candied nuts.
