Tomato Watermelon Salad
Mint Vinaigrette

½ cup        minced jalapeño
1 ½ Tbl        shallot minced
6 clove        garlic minced
1 cup        chiffonade mint
2 cup        Extra Virgin Olive Oil
2 cup        red wine vinegar
½ cup        honey

2 cups         watermelon cubed
2 ea        heirloom tomatoes
¼ cup        diced red onion
¼ cup        Spanish cheese or feta
Salt and pepper to taste
