Picano's 30th Anniversary

Picano's Italian Grille in Troy is celebrating 30 years in business on Wednesday, January 21, 2015.

Picano's Mamma Assunta

1oz. Olive oil blend
Flour for dusting veal
3-2oz. Pounded veal
Pinch salt & pepper
2tsp. Chopped garlic
1/2 c. Sliced mushrooms
2 Artichokes
1/4 c. White cooking wine
1/2 c. chicken stock
Squeeze of fresh lemon
1/4oz. Maggi
1Tbls. Butter

1. In a pre-heated sauté pan, add flour dusted veal and mushrooms, salt and pepper.
2. Once juices flow to top of veal, flip and cook additional 10 seconds. Remove veal from pan (you don't want to over cook the veal)
3. Add chopped garlic, toss.
4. Add white wine, chicken stock, lemon juice, and Maggi. Bring to simmer.
5. Add artichoke's and butter.
6. While sauce reduces, return veal to sauté pan, once at a smooth consistency, serve.
