Beans & Cornbread prepares black eyed peas

BLACK EYED PEAS

Total Time: 2 Hours & 10 Minutes Prep: 10 Minutes once peas are soaked.

Soak peas overnight in an uncovered stockpot, filled with cool water.  In the morning, drain the peas into a colander to drain away soaking liquid. Make sure peas are clear & clean. 

Cook Time: 2 Hours. Yield: 4 servings  

Ingredients:  

  • 16 ounces Black Eyed Peas 
  • Smoked Turkey 
  • Chicken Stock 
  • Pepper to taste (For a vegan recipe remove chicken stock & smoked turkey. Use salt and pepper only to season.) 

Stovetop Cooking: Add your peas to stockpot and cover with water, plus an extra 2 inches. Add Smoked turkey, pepper and chicken stock. (If using a vegetarian method, add 2 tablespoons of olive oil.)

Set over medium-low heat. Bring peas to a simmer and continue to keep at a low simmer for 2 hours. Refill with water and stir occasionally as needed, until the peas are fork tender for 2 hours. 

Serve with cornbread. Enjoy!
