Breakfast burritos with Rusty Bucket

February is National Breakfast Month.

Chef Elliott Webb from Rusty Bucket Restaurant and Tavern joined us on The Nine to share a recipe with us that can help start the day off right.

4 oz. breakfast sausage
2 oz. pepper/onion mix
1 Tbsp. cilantro
6 oz. egg mix
2 oz. quesadilla cheese
1 flour tortilla
2 oz. ranchero sauce
1 oz. sour cream drizzle
2 cilantro sprigs
5 oz. breakfast potatoes
1 oz. clarified butter

Place butter on the flat top and place sausage, and pepper/onion mix on top. Cook for one minute and stir frequently. Add eggs to the mixture and cook until the eggs are scrambled. Heat tortilla on the flat top heating for ten seconds on each side. Once eggs are cooked add cheese and cilantro. Place egg and sausage mixture in the tortilla, and roll into a burrito. Top the burrito with rancher sauce, sour cream drizzle, and cilantro sprigs. Serve with breakfast potatoes.
