Celebrate National Chocolate Cake Day with Josef's European Pastry Shop

Sunday is National Chocolate Day, and while there are many, many ways to celebrate, we wanted to check with the experts about how they do it. 

Executive Chef Shiobhan Clary, of Josef's European Pastry Shop in Grosse Pointe Woods, stopped by the Fox2 Kitchen Saturday morning to share one of their signature recipes and tasty treats.

Chocolate Cake Mix


  • 4 lbs. Cake Flour
  • 2 lb. 12 oz. Hymo Z
  • 2-1/2 oz. Baking Power
  • 2-1/2 oz. Salt
  • 1 oz. Baking Soda
  • 12 oz. Skim Milk Powder
  • 14 oz. Sifted Cocoa 
  • 7 lbs. Sugar
  • 2 oz. Surfax
  • 1 cap Full Vanilla
  • 4 oz. Fudge Base
  • 6 oz. Numolene
  • 1 qt. Cold Water (mix in first gear, add water immediately, mix in third gear for 30 secs., then stop.
  • 1 qt. Eggs (add to above gradually, first gear, then scrape down)
  • 1 qt. Cold Water (add to above gradually, first gear, then scrape down)
