Easter brunch at C.A.Y.A. Smokehouse Grill

(FOX 2) - C.A.Y.A. Smokehouse Grill will be open for both Easter brunch and dinner on Sunday, April 21. Brunch is from 10 a.m. to 3 p.m. and the dinner menu will be available starting at 4 p.m.

POTATO PANCAKES 
2#  Idaho potatoes peeled 
1 ea  whole shallot peeled 
1 ea  small white onion peeled 
1 ea  egg 
¼ cup   chives chopped Oil or clarified butter to cook with 
Salt and pepper to taste 

Grate the potato on a box grater on the large sized side. Squeeze out all the water. Grate the onion and shallot on the small sized side. Add chives and salt and pepper. Mix well. 

In medium sauté pan add the clarified butter. Heat on medium heat until melted and hot. Add the potato mixture in small amounts to the hot pan. When golden brown, flip the potato and finish on the other side. If they ae very thick, you may have to finish in the oven. Serve warm with sour cream or apple sauce.
