Easter grilled lamb chops with Mr. B's

Chef Johnny Prep from Mr. B's Gastropub in Royal Oak joined us in the FOX 2 Cooking School to show us an Easter recipe. 

He showed us how to make grilled lamb shops with rosemary garlic butter. You can watch as he prepares the dish in the video player above, and get the recipe below. 

GRILLED LAMB CHOPS WITH ROSEMARY GARLIC BUTTER
12 Loin Lamb chops cut 1 ½ thick
1 tsp. olive oil
2 oz. butter
1 tsp. fresh rosemary, chopped fine
1 tsp. fresh or roasted garlic, chopped fine
1 tsp. fresh chopped parsley
Sea Salt
Fresh ground pepper

In a small bowl smash butter with rosemary, garlic, and parsley together with a fork until it is evenly distributed in the butter.  Season lightly with salt and fresh ground pepper.  Set aside.
Rub the lamb chops with olive oil and season generously with sea salt or kosher salt and fresh ground black pepper.
On a hot grill or grill pan mark the chops with strong grill marks for approximately 3 minutes.  Turn 45 degress and mark chops again.  Turn chops over and repeat the process. 
Preheat oven to 350 degrees.  Place marked lamb chops on a baking pan and place in oven until done to our preferred temperature.  128-30  degrees will get you medium rare which is what I recommend.
Remove from oven and put a small dollop of compound butter on each chop.  Let rest for 5 minutes in a warm place or tent loosely with foil.  Serve and garnish with a sprig of rosemary.
