NYE Champagne with Busch's Fresh Food Market

Cracking open the champagne is a tradition for most on New Year's Eve. But with so many varieties, flavors and price points available it's difficult to know you're making the right selection for your New Year's celebration. 

Chef Rebecca Wauldron, executive chef of Busch's Fresh Food Market, stopped by the Fox2 Kitchen Saturday morning to break down some of the better choices out there, along with some fina appetizer pairings. 

 

Dom Perignon Vintage 2009

Pair with rich, creamy French cheese or mountain cheeses.  Our suggestions are:

  • Cremeaux de Bourgogne A La Dijonaise (Triple cream cheese with Dijon Mustard)
  • Comte (French style Gruyere)

Serve with baguette slices or simple water crackers.

Veuve Clicquot Rose Brut & Veuve Cliquot Brut

Pair with rich, creamy French cheese or mountain cheeses.  Our suggestions are:

  • Smoked Salmon Crostini- Toast 20 baguette slices in a 350 degree oven.  Cool to room temperature.  Combine 1/3 cup crème fraiche with a two teaspoons of fresh minced dill.  Top each toasted baguette slice with a small piece of smoked salmon.  Use a small spoon or piping bag to garnish each salmon piece with about a teaspoon of the herbed crème fraiche.  Garnish with minced chives if desired.
  • Proscuitto & Fig Crostini With Parmesan- Toast 20 baguette slices in a 350 degree oven.  Drizzle the baguette slices with olive oil and then top with a slice of fresh fig (or fig jam), a small piece of prosciutto and some slivered Parmesan Reggiano.  

Moet & Chandon Imperial Brut

Seafood or poultry with rich sauces. Our Suggestion:

Shrimp Cocktail with Smoked Paprika Aioli- Thaw or purchase 2 pounds of cooked, peeled shrimp.  Combine ¾ cup mayonnaise with 2-3 cloves minced garlic, 2 teaspoons lemon juice, 1 teaspoon smoked paprika, and 1 teaspoon hot sauce.  Stir until completely combined and serve with the shrimp.

 

Chandon California Brut Sparkling Wine

Pair with salty cured meat, olives, or salty snacks like popcorn or potato chips.  Also goes well with sushi.

Prosecco, Cava, & Sparkling Wine

Pair with fresh strawberries, raspberries or even cheesecake.
