Sheet pan suppers make easy clean-up

4 salmon fillets
1 red bell pepper, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 onion, chopped
1 cup snow peas
1 cup grape tomatoes, halved if large
½ cup Thai sweet chili sauce
¼ cup soy sauce
1 tbsp. fresh grated ginger
1 tbsp. fresh lime juice

1. Preheat oven to 375F and spray a cookie sheet with cooking spray or cover with aluminum foil. Lay the salmon skin side down surrounded by chopped vegetables.
