Caribbean Beach BBQ at Campus Martius Park, Aug 19

The Caribbean-themed beach party will be in full swing tomorrow on the 19th. Chef Jerry will do some grilling with drink specials, entertainment and games to be enjoyed the whole event.

Caribbean Ackee, Black Bean and Rice Salad with Jerk Chicken

2 c. Cooked Black Beans
4 c. Cooked White Rice
1- 11 oz. can Ackee
1 c. Diced Onion
1/2 c. Bunch Green Onions
1/2 c. Red Bell Pepper
1/2 c. Green Bell Pepper
1 c. Coconut Oil
11 g. Tomato, chopped
1 sprig Fresh Thyme (or ½ tsp. Dried Thyme)
1 whole Scotch Bonnet Pepper or Habanero Pepper
2 Tblsp. Kosher Salt
1/4 c. Black Pepper

Jerk Chicken
2 tsp. Allspice
2 Tblsp. Brown Sugar
1/2 tsp. Cumin
1/4 tsp. Cloves
1/4 tsp. Cinnamon
1 tsp. Salt
1/2 tsp. Fresh Ground Black Pepper
1/8 tsp. Cayenne Pepper
1 Tblsp. Canola Oil
1.5 lbs. Boneless Chicken Breast or cut up a whole chicken
