Grilled Haloumi & Melon Salad from Selden Standard

Pre-heat grill
Brush cheese w/olive oil
Place oiled haloumi on hot grill until golden brown, about 1 minute
Flip and cook another minute
Take off grill and keep warm

In a mixing bowl, combine melon, sugar snap peas, scallion, mint and radish. Season with salt and dress with vinaigrette to taste. 

Arrange on a platter and top with warm cheese and a drizzle of the dressing. 

Serve immediately!

Ginger Lime Vinaigrette

1 clove garlic, smashed to a paste
1T ginger, minced fine
½ c. lime juice
1T honey
2T rice wine vinegar
½ tsp kosher salt
1/8 tsp cayenne
¾ c. EVOO
