Lena: Grilled Shrimp Tacos

6-8 Each Shrimp, grilled

Jalapeno Sweet Corn Slaw
3 Each Corn on the cob, grilled and remove from cob
1 Each Jalapeno, de-seeded and chopped fine
1 Each Green Cabbage, shredded fine
4 Tbs Seasoned Rice Vinegar
1/3 Cup Sour cream

Combine all ingredients and chill in the fridge for 30 minutes

Verde Sauce
1 Each Poblano, roasted and de-seeded
1 Each Shallot, roasted
3 Cloves Garlic, roasted
1 Each Avocado
2 Tbs Lime juice
2 Tbs Cilantro, chopped
Salt/Pepper to taste

Combine all ingredients in blender and puree until smooth

Hot Pepper Peach Margarita
1.5 oz. hot peach tequila (one bottle of tequila contains about 8 oz of peaches [frozen is fine] and one sliced jalapeño, aged for 5-7 days)
1.5 oz. house made sour mix (simple syrup blended with fresh lime, lemon and grapefruit juices)
1 oz. simple syrup
.75 oz. peach puree (frozen peaches blended until smooth)

Combine all ingredients in shaker, shake vigorously, transfer to cayenne-sugared tumbler glass.
