Maria's House Made Salsa
4 medium Roma tomatoes
½ cup diced tomatoes in juice (drained)
¼ cup onions
1 tsp lime juice
½ tsp garlic (blanched boiling water 6 minutes)
1 tsp salt
½ tsp turmeric
½ tsp cumin
2 TBS fresh cilantro
First, blanch your garlic. Bring water to a boil, add garlic and simmer for 6 minutes. Drain garlic and puree.
Dice tomatoes and onions approximately ¼ inch. Puree canned tomatoes. Rough chop cilantro. Mix all ingredients in a bowl. Pulse in food processor to proper consistency.
Yields approximately 2 cups
