Cooking from the Summer Garden at CAYA Smokehouse Grill

Summer salads are popular fare this time of year, and you don't have to have a real 'green thumb' or go over the top to create one that everyone can enjoy.

Chef Jeff Rose, of the CAYA Smokehouse Grill in Wolverine Lake, joined the Fox2 News anchors in the kitchen Sunday morning to show how to cook right from your summer garden, and to showcase some of his signature summer dishes.

Tomato Watermelon Salad Mint Vinaigrette

  • ½ cup                  minced jalapeño
  • 1 ½ Tbl                shallot minced
  • 6 clove                garlic minced
  • 1 cup                   chiffonade mint
  • 2 cup                   EVOO
  • 2 cup                   red wine vinegar
  • ½ cup                  honey
  • 2 cups                 watermelon cubed
  • 2 ea                     heirloom tomatoes
  • ¼ cup                  diced red onion
  • ¼ cup                  Spanish cheese or feta

Salt and pepper to taste. To make the vinaigrette: In a separate bowl combine the watermelon, tomato, onion, and cheese. Pour enough vinaigrette to evenly coat all items. Serve immediately.
