Fogo de Cháo joins Fox 2 Weekend
Caipirinha
Ingredients:
1 whole lime
2 tablespoons white sugar
2 oz. Cachaça
Preparation
Cut lime in half and remove core (this is the bitter part of the lime; it is not sour)
Slice lime thinly against the direction of the core
Place sliced lime in a rocks glass and add two tablespoons of sugar
Muddle lime and sugar together to extract the natural juice of the lime.
Fill glass to the brim with ice, and add 2 oz. of cachaça
Cap glass with bar shaker and shake thoroughly to ensure the sugar dissolves evenly
Pour back into rocks glass and serve at once
Note: Garnish the Caipirinha with a lime wheel or stick of sugar cane, as desired
Caramelized Pineapple Old Fashioned
Ingredients:
3 pieces of fresh pineapple, cubed
Sugar in the Raw
1/2 oz Cane sugar
Orange slice
Maraschino cherries
Bulleit Rye Whiskey
Preparation:
Place pineapple cubes on a cutting board or cookie sheet and sprinkle with sugar in the raw
Brown with a Brûlée torch or under the broiler in the oven until golden brown
Add 3 of the cubes (1/2" thick) to cocktail shaker
Add 1/2 oz cane sugar, orange slice and cherry to cocktail shaker with the pineapple
Muddle the ingredients well
Add whiskey to shaker and fill with ice
Shake drink well in order to dissolve the sugar
Pour into rocks glass and serve
Note: Garnish with cherry and pineapple
