Meatless Monday: Recipes with strawberries


Strawberry spread:

In medium pot combine strawberries and sugar
Heat over low heat until strawberries become watery. Add chia seed and stir well.
Bring to boil then simmer over low heat for 10 minutes, letting it thicken.
Remove from heat, set aside to cool.

Oat Bar:

In a small bowl prepare chia egg
In large bowl mix oats, flour, stevia, baking soda and salt. Set ½ cup mixture aside.
Add earth balance, syrup, milk, to chia egg. Whisk well.
Combine wet and dry ingredients and mix well.
Pour the mixture in the baking pan(s) and press down with balls of fingers, smoothing out.
Spread medium layer of strawberry mixture and smooth out.
Sprinkle on the reserved ½ cup oat mixture.
Sprinkle on coconut or sesame seeds.
Bake for approximately 30 minutes
Cool for 30 minutes and remove from pan
Slice and refrigerate

Strawberry sweet potato cheesecake tarts

INGREDIENTS:

12 mini graham cracker pie crust
1 cup cooked mashed sweet potatoes
1 at room temperature
½ cup agave nectar
2 tablespoons prepared energ- g (egg substitute)
¼ cup almond milk
¼   teaspoon cinnamon
1 teaspoon vanilla extract
1/8 teaspoon nutmeg
1 tablespoon cornstarch

DIRECTIONS:

Preheat oven to 350°F
In a large bowl, beat cream cheese and agave until fluffy
Beat in egg substitute and almond milk.
Add mashed sweet potatoes. Mix well
Add cornstarch, cinnamon, nutmeg and vanilla. Blend well
Pour batter into pie crusts.
Bake for approximately 30 minutes
Remove from heat and cool at least 1 hour.
