Don Marcos shows us how to make Mexican Lasagna

Lasagna doesn't have to be Italian! Daniel Gutierrez from Don Marcos showed us how to make Mexican Lasagna.  It's a super easy recipe, and can be tweaked to personal liking.  Check out the recipe below.

Mexican Lasagna

Ingredients
One package Don Marcos 6" tortillas
1lb. chicken or ground beef
Fresh or jarred salsa
4 cups Monterey Colby Jack cheese
2 cups vegetable oil
Sour cream (optional)
Green onion for garnish (optional)

Directions
Preheat oven to 350F. Boil chicken in water until fully cooked (or cook ground beef to desired temp). Heat vegetable oil in pan on medium heat. Cut tortillas into 1 1/2" strips. Fry tortilla strips in oil until golden brown. Shred chicken, then add salsa to either the chicken or beef. In a baking dish, place a layer of tortillas at the bottom, followed by a layer of cheese. Spread chicken mixture on top of the cheese, then add another layer of cheese. Repeat for desired number of layers. Bake 15-20 minutes, or until cheese is golden brown. Cool 5-10 minutes, and add a dollop of sour cream with a dash of green onions. Serve!
